Leah shared this recipe with me a few years ago and its still a big hit around here. For some reason no matter how many times I make it I can never remember the recipe and I find myself digging through my large cabinet of recipes(I have actually purchased files to organise my recipes yet Ive never managed to get it done)to find it. Today I remembered that I had emailed the recipe to another friend(Mary) and was able to search through emails to her to find it. Anyway, as with most things in my life that I don't want to miss place I'm putting it here on the blog...
Amazing Brown Rice Salad
3cups cooked brown rice (1cup dry) -Mahatma(is the brand we use)
diced red pepper
diced green onions
shredded carrots
1/2cup raisins
1/2cup cashews
Dressing:
3-4TBS Vegetable oil(canola, safflower, olive, etc)
Sesame Oil (large dribble)
Seasoned Rice Vinegar (large dribble)
Soy Sauce (large dribble)
2cloves minced garlic
a little grated fresh ginger
Whisk the dressing or shake in a jar and combine. Refrigerate.
We also add either chicken breast or tofu to it. Today we are using extra firm tofu(pressed for a good hr and then brown in some EVOO, again Leah if you are reading thank you for teaching me how to prepare tofu)

They are my friends, but their organic rice is the best! massaorganics.com. I am not sure if you can purchase thru their web site or not, yet. You have to try it!
