Lazy Sunday
What do you do with:
2frozen chicken breasts
4carrots
3stalks of celery
1onion
5red potatoes
(misc staples such as chicken stock, flour, and seasonings?)
Make my delicious Chicken Pot Pie!
Cube, cook and then shred chicken(with a diced onion), set aside.
Melt 3TBS butter(unsalted -or whatever you have-)
add in 1/2 tsp of tarigon(sp?) and 3TBS of flour, cooked on m/h heat until golden brown.
Add 1.5cups of chicken broth and 1/2cup of heavy cream(or milk) salt and pepper(1/2 tsp of each), set aside.
Dice carrots, celery,(frozen peas are also good in this but my DP hates peas so I omit them and use): cubed potatoes(red/white/whatever you have) cook in 1/2 cup of chicken broth for about 10-12minutes until broth is evaporated and veggies are tender.
Add chicken and onion and cook for another 2minutes.
Add reserved (filling/cream/gravy)
cover and set aside.
Next you'll want to prepare your crust(I actually do this first and stick it in the fridge to get cold so its easier to roll out) or just use premade crusts.
Add filling to crust, you can(or not) add a second crust to the top. Cut into top crust a bit to allow some air to escape. Bake at 350 until crust is golden brown(I like to paint butter on top of my crust a few times before its done)

I've hit that point in my monthly budget where its too soon to go grocery shopping, and my pantry is full of a whole lot of NOTHING!
First 2/3's of the month I am one of those no-brainer-cooks, prep time is always less than 10minutes and then it gets tossed in the oven and within the hour dinner is served. Summer weekends are always a little tricky because we are gone so much. We used to maintain a Sunday ritual where I would slow cook a chicken, roast, etc and I would do Shana's hair while the house filled up with the most delicious smells(which always made me think of the holidays, I love slow cooked winter meals; AND the holidays!)
Over the summer we go go go so much that our Sundays often and come and go without much thought or realization, which means I obviously slack on DP's hair. We always eat better and she always looks better in the colder months, lol.
Ive managed to squeeze a few extra meals out of our pantry for the next week, which will include:
~Red beans and rice with polenta
~2 fish dinners both likely to be served with rice, one with frozen broccoli and one with roasted red potatoes
~BRC burritos with slow cooked beans and wrapped in homemade tortillas, rice and a cabbage lemon juice/salad(YUM!)
~breakfast skillet(eggs, cheese, potatoes, garden grown green bell peppers, with some crispy chopped turkey bacon)
~Hamhock and beans with corn bread
~potato with ham(half of what comes off the hock from the beans) and cheddar soup
that's all I came up with so far but I think that's pretty good since Im squeezing it out of a whole lot(or little) of nothing.
Im really proud of Shana's hair. Its been a journey and our babies are growing up. They are 2.5yrs old and in great shape! Other than a few snags(such as sending her to a lockticion(sp??) (once to give myself a break)(rolling eyes) where she put BEESWAX in her hair! WHAT AN F-ING MESS! I cried for hrs and it took MONTHS to get it all out. Ive never used anything besides tea tree oil, rosemary oil/almond oil, and FRESH aloevera gel that I squeeze as I go. I palm roll her locks.
Ive invested so much into her hair that Ive even had nightmares about it, for example her coming home and them being gone. I had a dream she shaved them off and I cried so hard in my dream I actually woke up crying. Ive told her that if she gets her locks cut off without first talking to me(or letting ME do it) I would leave her.
Ok Ok obviously I wouldn't leave her, but I am very invested and attached. Shana says shes growing them till Olivia's 18th birthday and then cutting them(we'll see) they are getting long now, Id like to get them past her shoulders and then maintain that length, again we'll see. Mmmmm, that sounds so yummy!!! About a month ago I made a chicken pot pie, without the pie, a recipe I saw on 30 minute meals, and it was so good. I love pot pie. I also pulled out the slow cooker yesterday and made a turkey breast with stuffing. It was so good I invited my parents over for dinner on the spur of the moment, so I could share it.
Wow. Dinner sounds great.
Shana's hair looks awesome! You've done a great job! What a neat little bonding time to have.
